flying noir is all about true, micro-batch, artisan production, seeking out the finest ingredients, constantly experimenting. I want your experience to be a multi-layered composition, amazing in the mouth! I concentrate on creating small boxes of bonbons, each one providing interesting flavors, visual and textural experiences.

Honors include: 1 of the Top 10  Chocolatiers in America, 6 Star Award winner at the International Chocolate Salon, #1 Luxury Chocolate: The Finest Chocolate Truffles for Chocolate Lovers.

My backstory is that of an artist, offering chocolate truffles to attendees at opening receptions with her art on the walls, hoping to listen (unobtrusively) to comments about her work. Mostly the conversations were about where to go to dinner, or the lives of themselves and their friends - but they liked the chocolate, and began saying that I should turn professional.  Not something taken seriously, until the bottom fell out of the art market during the recession. Then serious study led to a determination to pursue chocolate with the same depth of involvement in bringing my art to tiny pieces of chocolate, including a longstanding commitment to use natural colors only, along with natural ingredients. I pursue the highest level of achievement possible for the sake of discovery, and for sharing with those of you that choose chocolate from flying noir.
